Sweet Potato Casserounds
Servings: 6-8 people
1Preheat oven to 400°
2Slice sweet potatoes into rounds.
3On a large jelly roll pan (or other pan with sides), toss sweet potato slices with melted butter and maple syrup and arrange in a single layer.
4Season with salt.
5Bake until tender (about 20 minutes) flipping halfway through.
6Remove from oven and turn oven on broil.
7Top each sweet potato round with a marshmallow and broil until slightly golden brown.
8Sprinkle crushed pecan over marshmallow and serve.
