Fresh Oyster Stuffing

1Chop all the Veggies.
2Heat butter in large skilet. Add the onions and celery. Saute until translucent.
3Add oysters to the pan and saute just until they start to curl around the edges.
4Add the chicken broth, Poultry seasoning, salt & pepper and stir gently. When the broth comes to a simmer, add the peppers and parsley. Remove from heat and toss with the stuffing mix until evenly moist.
5Allow to cool a bit and stuff turkey loosely. Follow the cooking guidelines for the turkey. Or, if you are not stuffing the turkey, simply place in baking dish and cover. Bake 30 minutes covered at 350 degrees. Remove the cover and bake for another 10-15 minutes until heated throughout and crispy on the top.
