Fresh Oyster Stuffing

McGonigle's favorite!


1 Large yellow or bunch of green onion

1 Bunch Celery

2-3 Green, yellow or red pepper Pepper

1 Bunch Parsley, chopped

1 cup Chicken broth or Turkey Stock

1 pint Fresh, shucked Oysters with natural liquor

1/2 cup Butter

1 16 oz package herb seasoned stuffing mix

1/2 tsp Poultry Seasoning

Salt and Pepper to taste


1Chop all the Veggies.

2Heat butter in large skilet. Add the onions and celery. Saute until translucent.

3Add oysters to the pan and saute just until they start to curl around the edges.

4Add the chicken broth, Poultry seasoning, salt & pepper and stir gently. When the broth comes to a simmer, add the peppers and parsley. Remove from heat and toss with the stuffing mix until evenly moist.

5Allow to cool a bit and stuff turkey loosely. Follow the cooking guidelines for the turkey. Or, if you are not stuffing the turkey, simply place in baking dish and cover. Bake 30 minutes covered at 350 degrees. Remove the cover and bake for another 10-15 minutes until heated throughout and crispy on the top.
