Cake Ingredients mcgonigle's market pumpkin spice pinwheel

  • 3 large eggs
  • ¾ c. all-purpose flour
  • 1 c. granulated sugar
  • ½ tsp. Salt
  • ½ tsp. Ground allspice
  • 1 tsp. Ground cinnamon
  • ½ tsp. Ground cloves
  • ¼ tsp. Ground nutmeg
  • 1 tsp. Baking soda
  • ⅔ c. pumpkin puree
  • Powdered Sugar

Filling Ingredients

  • 12 oz. cream cheese (softened)
  • 1 tbsp. Melted butter
  • 1 ¼ c. powdered sugar
  • 1 tsp. Vanilla extract
  • ½ tsp. Salt

Preheat the oven to 350 degrees. Take a 15” X 10” jelly roll pan with parchment and cover with cooking spray. In a large bowl, take all of the cake ingredients and combine them. Pour this mixture into the pan and spread evenly. Now bake it for 10-15 minutes. While the cake is baking, lay out a large kitchen towel on the counter and cover with a thin layer of powdered sugar. When the cake is done baking, carefully flip the cake onto the kitchen towel and peel off the parchment paper. Start at the short end and gently roll the cake up into a log and put in the fridge to cool for 5-10 min.

Pro tip: When testing to see if the cake is baked thoroughly, give it the ol’ toothpick test. The toothpick test is if you can insert the toothpick into the center of the cake and pull it back out without any of the cake rubbing off on the toothpick.

Now it’s time to make the filling. Take a large bowl, and combine all the filling ingredients. We found it much easier to use a hand mixer for this step. Remove the cake from the fridge and unroll on the counter. This is where you take the cheese filling to spread evenly on the cake. Once this is done, roll back up and dust with more powdered sugar.
