Oyster Dressing

1 lg onion or 3 bunch green onion
1 bunch celery
1 lg green pepper
1 lg red pepper
2 Jonathan Apples
salt & pepper to taste
1 tsp Poultry Seasoning
1 bunch parsley, chopped
1/2 cup Chicken or turkey broth
1 pt fresh east coast oysters
2 sticks butter
1-14oz pkg Premium Herb Seasoned Stuffing

Makes enough dressing to stuff a small (10-14#) turkey…for a larger turkey, double recipe.Chop all vegetables. Melt butter in large pan. Lightly sauté vegetables in butter. Add oysters and sauté just till they curl around the edges. Add the broth and bring to a simmer. Add stuffing mix and toss lightly till evenly moist. Let cool and stuff turkey, pork crown roast or pork chops. If you dont’ think you like oysters, replace the oysters with 2 cups water or chicken broth…but don’t be so sure you don’t like oysters!!This is the dressing that I grew up on. My dad was a huge oyster fan and he and my mom did not think the kids would eat the dressing if they told us that the stuffing had oysters in it. When I started working with Dad at the store, I asked him why so many people bought oysters for Thanksgiving. He replied that they like to use them in the dressing. I said, “That sounds gross!” He got a sly grin on his face and informed me that I had been eating them all my life. Years later, I was on a radio show and talking about my Dad’s recipe for oyster dressing. When I got back to the store, my mother called me and said, “What makes you think that is your Dad’s recipe?” So, I am still not sure today where this recipe originated but I now call it “My Parents’ Recipe.” –MJM
