Homegrown Veggies for a Fresh Summer at McGonigle’s

Thankfully we have literally everything you might need for a summer BBQ. From the most succulent ribs, to small specialty brews, to in-season fruits and veggies. We like to support local farmers and growers from all over Missouri, Kansas, and even parts of Northern Arkansas, which allows us to serve you up the freshest, most delicious produce. Here’s a look at what we have coming in from our local farmers this month and what’s currently in season now:

To put some of these seasonal fruits and veggies to use, try making this refreshing and tangy peach salsa from Southern Living Magazine. It’s perfect for any get-together!:

1 large sweet onion, chopped
1 jalapeño pepper, seeded and minced
1/4 cup sugar
2 tablespoons grated fresh ginger
2 tablespoons olive oil
6 large firm peaches, peeled and chopped
1/4 cup fresh lemon juice
1/4 teaspoon salt
2 tablespoons chopped fresh cilantro

Start off by sautéing the first 4 ingredients in hot oil in a large skillet over medium heat for 5 minutes or until onion is tender. Stir in peaches and remaining ingredients, and cook, stirring gently, for 5 minutes. Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 2 days.
