Pomegranate is a luscious, rich, sweet and delicious holiday fruit. So why not incorporate it into your Christmas meal! The sweetness of the pomegranate pairs perfectly with the saltiness of pan seared chicken wings and thighs. Make a delicious pomegranate sauce for your seared chicken by whisking together 1/3 cup pomegranate juice, 1⁄4 cup rice wine vinegar, 3 tablespoons brown sugar, 1⁄2 tablespoon soy sauce and the juice of one lime, and 3 minced garlic cloves. After searing chicken in a pan, bake the chicken in the sauce in an oven set at 375 degrees for 20-25 minutes. Garnish with pomegranate arils.
